Easy Pumpkin Spice Latte Recipe

Easy Pumpkin Spice LatteAhhh Fall.

The season when we shower with pumpkin body wash, use our delicious creamy pumpkin body lotion, light a pumpkin spice candle and basically pumpkin ourselves, right?  It’s also the season many coffee retailers look forward to with robust excitement because they know we’re going to spend a lot of money on their regular coffee, with pumpkin flavor added to it, that they charge $5 a cup for!

If you love pumpkin spice lattes but want to have money left over to buy your candles and lotion, here’s a super-easy recipe to make pumpkin spice lattes (or pumpkin spice coffee) at home.  Open a can of pumpkin and store in a container in the fridge with a lid and you’re good to go – 2 tbsp at a time!

Easy Pumpkin Spice Latte

Ingredients
  • 2 cups milk (any % you choose)
  • 2 tbsp canned pumpkin puree
  • 2 tbsp white sugar
  • 2 tsp vanilla extract
  • ½ teaspoon pumpkin pie spice
  • ½ cup strong coffee or espresso
  • canned whipped cream
Instructions
  1. Add the milk, pumpkin, sugar, vanilla and pumpkin pie spice to a small sauce pan over medium-high heat. Bring almost to a boil. (Alternatively you can use a 2-cup Pyrex measuring cup and heat in the microwave).
  2. Remove from heat/microwave and add to a blender. Blend on high until the milk begins to froth, about 2 minutes.
  3. You will have enough milk/pumpkin mixture for 2 mugs. When pouring coffee in, try to add it along the side of the mug so the frothy milk mixture maintains it's setting but if you mess it up, that's OK too, it still tastes just as good!
  4. Add a healthy shot of whipped cream topping and sprinkle with pumpkin pie spice, cinnamon or nutmeg and serve. Extra points added if you take the first sip without getting whipped cream on your nose.

You can brew strong coffee in place of the Espresso – for example I use Tully’s Coffee Italian Roast Extra Bold in my single-cup coffee maker – and it tastes delicious this way.
