Cheddar Biscuits

Cheddar BiscuitsOn a freezing winter day (when isn’t it?) I made a pot of hamburger soup, one of my favorites.  When I debated making buns, a friend suggested I try biscuits instead because they were much easier.  I like easy.  I searched out a biscuit recipe and while many call for the same ingredients, some looked more complicated than others.  I went with Betty Crocker’s original biscuit recipe but added cheese (cheese makes everything better) and since I didn’t have buttermilk, I soured the milk with lemon which works wonderfully in a pinch.  Here’s the recipe below, which I’ll be making many times over now!

Ingredients
  • ¼ cup salted butter, cold from the fridge
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 2 tbsp sugar
  • ¾ cup milk
  • 1 tbsp lemon juice
  • ⅓ cup shredded cheddar cheese (I didn't really measure this but ⅓ cup seems about right)
Instructions
  1. Preheat oven to 400 F.
  2. Start by adding ¼ cup salted butter to a bowl, no need to get it to room temp first
  3. Add 2 cups all-purpose flour to the bowl, along with 3 tsp baking powder and 2 tbsp sugar.
  4. In a measuring cup, add 1 tbsp lemon juice to ¾ cup milk to sour. Mix and pour over the flour mixture.
  5. Stir the dough mixture until it's not sticking to the sides of the bowl. If needed add a little extra milk if too dry, or some flour if too wet.
  6. Add cheese.
  7. Lightly flour a hard surface and knead the dough about 10 times.
  8. Roll out the dough to about ½" thickness then use a small cup to cut circles in the dough. Re-roll as needed to use up all your dough (this recipe makes about 12 biscuits)
  9. Place on a cookie sheet and bake for 12 minutes. Move to a cooling rack when done.

  • You know something up until about 3 months ago I had no idea either. My mother makes some about once a month and I thought I remembered seeing her do it when I was growing up and it taking longer….Impatient child maybe?? haha I made my own batch and couldn’t believe how easy it actually was. I made half without cheddar for use with homemade strawberry jam!!

  • These biscuits look a lot like a recipe that my Mum had brought with her from England…they were delicious but my older sister lost the recipe! This is a keeper and I am going to make them!!

  • Just a suggestion: Step#8.. roll out into a rectangle and with a knife cut into 12 equal pieces. Saves re-rolling the dough and keeps the biscuit tende tender. Of course for company , using a biscuit cutter makes for a nice presentation.

  • I love a good cheese biscuit with a homemade soup. It’s such a comforting meal! I like the ideas in the comments to add in spicy cheese or garlic. Maybe dill too?

  • It is a great idea to make a triple batch. I have a similar biscuit recipe and put all the ingredients into a large zip lock back and blend. This keeps for a month in my fridge. Measure out the 2 cups, add the liquids. I add cheese, cinnamon sugar, or herbs to the mix, stir and add in the liquids. So handy as the mess is done 1 time and I can bake fresh biscuits to go with whatever is on the menu.
