Holiday Brunch (Wifesaver Breakfast Casserole)

Wifesaver Breakfast CasseroleThis breakfast casserole has been a tradition on holidays and family gatherings for years.  I didn’t realize it wasn’t as commonplace for most when I’d been asked about it several times over the last few weeks!  So, I made it this weekend when we had guests over and snapped a pic for you, and an Instagram share of course!

wifesaver breakfastHere’s the (very easy) recipe!  Note that you have to prep everything the night before, but that makes the next morning super easy when you only need to add a topping or two and pop into the oven.

Wifesaver Breakfast Casserole
 
Ingredients
  • 12-16 slices of bread, crusts removed
  • 8-10 cheese slices
  • 6-8 slices of ham
  • 10 eggs
  • 2 tsp Worcestershire sauce
  • 1 tsp dry mustard
  • 3 cups milk
  • ½ cup onion
  • ½ cup red or green pepper (or both!)
  • ½ cup diced mushrooms
  • salt/pepper to taste
  • ½ cup butter or margarine, melted
  • 1 cup cornflakes
Instructions
  1. Butter the bottom of a 9x13 baking dish
  2. Lay 6-8 slices of bread in the bottom of the dish
  3. Cover with a layer of ham
  4. Next, lay cheese slices on top of the ham
  5. Lay another 6-8 slices of bread on top of the cheese
  6. In a bowl, beat the eggs and add the Worcestershire sauce, dry mustard, milk, onion, peppers, mushrooms, and salt/pepper
  7. Pour liquid mixture over the casserole, cover and place in the fridge overnight
  8. In the morning, remove casserole from the fridge, melt ½ cup butter or margarine and pour over the casserole.
  9. Top with 1 cup cornflakes
  10. Bake, uncovered, in 350 degree oven for one hour
