Spicy Hamburger Potato Soup

I love hamburger soup.  It’s one of our frequent meals in the winter months because it’s so easy on busy days and fills up the family with a hearty warm meal.  I saw a variation on Pinterest for Spicy Potato Soup and decided to adjust it a bit to make my own dish.  Here’s my version!

Spicy Hamburger Potato Soup
 
Ingredients
  • 1 pound lean ground beef
  • 1 onion, chopped
  • 4 cups peeled & cubed potatoes (about 3-4 medium sized potatoes)
  • 2 celery stalks, diced
  • 1 can tomato sauce (680ml or three 8oz cans)
  • 6 cups water
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • ½ teaspoon hot sauce
Instructions
  1. In a large pot or Dutch oven, cook beef and onions until browned, drain fat.
  2. Add potatoes, tomato sauce, celery, water, salt, pepper, and hot sauce.
  3. Bring to a boil.
  4. Reduce heat to low and simmer for at least 30 minutes.
  5. Serve with shredded cheese (optional)
Notes
½ tsp of hot sauce may not seem like much, but don't be tempted to add more until you serve. It's a decent amount for the whole family (kids won't find it too spicy) but if you like more kick, add at the table.
