Mini Turkey Bacon Quiche (no crust)

Easy Turkey Bacon Quiche recipe (no crust!)  Just use muffin tins to make these easy breakfasts for busy mornings!  I wish summer could last forever.  For those of my readers sweltering in the heat, please understand that I live in Saskatchewan and so my summers are relatively short.  We don’t get the massive heat waves that the east gets, and if we can get a solid two months of +20 temps we’re very happy.  I could live with this weather all year round, though perhaps the lazy hazy days of summer are part of the overall package.

I try not to use my oven a lot in the summer – though with our comfortable temps it’s not a big deal if I do.  Still, easy recipes are the way to go.  Farmer’s markets are full of bounty and preparing snacks ahead of time in the morning when the kitchen is still cool pays off later in the day.

Over the summer, I’m partnering up with Butterball to share recipes and cooking inspiration using, of course, Butterball turkey products.  The Butterball Canada website is packed full of great turkey recipes for year-round cooking.  I’m eager to try a few that I’ve bookmarked as I mentioned in this post, I’m determined to bake a turkey before the summer is over!

Here’s my current go-to Butterball Turkey Bacon recipe for Turkey Bacon Quiche.  My 2 year old calls them “eggie muffins”, I call them the perfect morning snack for everyone.  They’re packed full with goodness and will keep little tummies satisfied until lunch (big tummies too!)

Turkey Bacon Quiche

Ingredients
  • 4 eggs
  • 1 cup milk
  • ½ cup chopped spinach
  • ¼ cup diced red pepper
  • ¼ cup diced mushrooms
  • 1 tbsp diced onion
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, chopped
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 325F
  2. Whisk milk and eggs in a bowl until well blended
  3. Stir in remaining ingredients
  4. Pour into 12 non-stick muffin cups (I spray mine with cooking spray)
  5. Bake 40 minutes

That’s it!  It really is a super easy recipe and a great way to use up some extra veggies you have on hand.  Turkey bacon is the perfect compliment to the spinach and peppers and the kids love it!  I don’t even mind if they – gasp – dip the quiche in ketchup.  Whatever works for healthy, happy kids before they run out the door to the backyard!
