Bacon Wrapped Jalapenos

This is my favorite appetizer right now, and I fear if I keep making it I’ll grow sick of it but it hasn’t happened yet!  It’s ridiculously easy to make too!  You can make as many or as little as you need, but for this recipe let’s go football-game-day-with-friends size.

Bacon Wrapped Jalapenos

Ingredients
  • 20 whole jalapenos
  • 2 eight oz blocks of cream cheese, room temp
  • 1 cup shredded old cheddar cheese
  • 2 packages bacon (regular sliced, not thick)

Instructions
  1. Preheat oven to 400 degrees.
  2. Rinse jalapenos and then slice lengthwise, remove seeds/membranes.
  3. In a bowl, combine cream cheese and shredded cheese until well mixed.
  4. Stuff each jalapeno-half with a cheese mixture, wrap with a slice of bacon and place on a baking sheet.
  5. Bake for 20-25 minutes, turning on the broiler at the end for a few mins to crisp the bacon if needed.

Notes
You can tame down the jalapeno hotness by letting them sit in a bowl of cold water once halved for 30m, however sometimes that takes away all the heat!

      I heard if you close your eyes when eating them, the calories don’t count because you can’t see them. Or…something like that? :P

  2. These are awesome, my daughter made them earlier on in the summer and like you I’m addicted, instead of bacon we use prosciutto, so good :) Had them tonight :)

  3. I make a different version of this also. Cream the cheese in the microwave, add chopped cooked bacon to the creamed cream cheese,
    the add the fried jalpenos to dip..YUM!!!

    Never gets old.

  7. YUMMY!! For a variation (if you like to BBQ), I leave them whole, cut a capital i in one side to empty the seeds, fill with cream cheese (I like the part in your recipe about adding cheddar), wrap with bacon, skewer 3-4 per skewer, brush with bbque sauce of choice and grill.

  11. I make mine exactly like this with some additions!
    I add a bit of Chipotle Chili Powder in with the cream cheese/cheddar mixture AND I add a topping of brown sugar w/ chipotle chili powder on top before baking!
    SOOOOOO GOOD!

  12. i do this but brown some breakfast sausage first and add my cream cheese, then stuff peppers and wrap. they are awesome!

    My husband would love these. I don’t like spicy foods, so I’ll have to make my own version using something else, or else try out your tip for making jalapenos less spicy.

    I like everything about your recipe except the Jalapenos, can’t eat them…but I would do this with mushrooms maybe it would work.
