Bring Fresh to Your BBQ – Fruit Salsa!

Oh how I love this time of the year! The weather is heating up, decks are filling up, and there’s more opportunity to get together with friends. Undoubtedly the get-togethers center around food and BBQ menu ideas.  “What can I bring?” “It’s a pot-luck, I want to do something different!”

Recently at my friend Cora’s house, she made a delicious fruit salsa and after getting the recipe, it’s kind of stuck in my brain now.  In that I can’t stop thinking about it.  I’d eat it every day if I could.  I’d eat it with a spoon.  I’d eat it in a house.  I’d eat…ok you get the picture.

The recipe itself is really easy:
1 granny smith green apple
2 kiwis
6-8 strawberries
2 tsp apple jelly

Dice all ingredients by hand or in a mini-chopper if you have.  You can play with the salsa ingredients as well, adding more apples, or maybe some raspberries.

For dipping, use home-made cinnamon tortilla chips:
1 pkg round tortillas
brown sugar and cinnamon mixture to taste

Spray both sides of the tortilla with cooking spray, then cut into bite size pieces (a pizza wheel works great for this). Toss in your brown sugar and cinnamon mixture and then bake flat on a cookie sheet at 300 for 6 minutes.
