Ice Cream Cupcakes

I enjoy cooking, but baking is not my strength at all!  When I made Popcorn Cupcakes for my daughter’s 3rd birthday, I was so thrilled with myself!

Recently, I’d been seeing some photos on Pinterest of Ice Cream Cupcakes and wondered if it was something me – a novice baker – could do.  Then, my friend Heather made the cupcakes above for her daughter’s birthday and I was convinced!

They really are super-easy though transporting them may be your biggest challenge!  The best tip I read was to take a pizza box and cut holes in the top.  The width of the box is perfect for the cones to be supported well.

They’re so easy to make, there’s really no need for a recipe.  Simply stand your ice cream cones on a baking tray or in muffin tins, mix your cake mix according to the directions on the box, then spoon about 1/4 cup of the cake batter into each ice cream cone.  Then, it’s up to you to decide how to top these creations!
